This Chiu Chow Chilli Oil is a fiery, aromatic condiment inspired by the flavours of Chaozhou (Teochew) cuisine. Handmade in small batches, it delivers a clean, powerful heat with a distinctive numbing tingle from Sichuan peppercorn, balanced by the deep roasted flavour of mixed dried chillies — including Naga Jolokia for an extra kick. The result is a scarlet, aromatic oil with layers of flavour: smoky, spicy, numbing, and intensely satisfying.
